So, it’s Monday morning. Everyone’s going back to school. I’m not…not even close but it still feels like a fresh start to me every Fall.
I decided to start with my favorite pancakes. They’re endlessly customizable. Today I topped it with cinnamon tahini, blueberry maple syrup and a crazy ripe peach. Although, the peach was used as camo since I forgot to spray the pan and had to scrape it off. Whoops! It all goes to the same place.
Now, the important stuff. Breakfast.
This is loosely based on the Perfect Fit pancake from the Tone It Up girls. I have def. have a girl crush at Karena and Katrina. They’re amazing but I had some tweaking when it came to their infamous pancakes. A big change was banana! I have a self-diagnosed banana allergy…
Enter Whitney V.’s Single Girl Pancake.

I like options. You can make this pancakes hundreds (thousands?) of ways…Anyway you want it. That’s the way you need it. Oh right, the recipe.
Here she blows:
Single Girl Peach Pancake
Makes 1 pancake
- 1 egg
- 1/2-1 tablespoon milk (I used coconut milk today but you can use nut, flax, raw milk, etc.)
- 1/4 cup applesauce
- 2 tablespoons oat flour (gf) or protein powder
- 1 teaspoon maca (optional superfood boost)
- cinnamon or pumpkin pie spice
- pinch baking powder and/or pinch sea salt
Directions: Whisk the egg, milk, and applesauce together. Then add flour/protein powder, maca, cinnamon, and baking powder. Mix until just combined. Cook over medium low heat until bubbles form, then flip.
LOW and SLOW wins the game when it comes to cooking these pancakes.
Top with sliced peaches, natural maple syrup, and whatever strikes your fancy.
*Add some cacao powder for a chocolate version and drizzle melted nut butter. Seriously amazing. Sometimes I like to feel decadent at breakfast time.
